Easy Sweet and Moist Zucchini Bread
This zucchini bread is one of the easiest recipes to satisfy your sweet tooth while sneaking in some added nutrition thanks to zucchini’s nutrient content including vitamin C and B6.
Did you know zucchini is actually a fruit? I didn’t, but of course, I had never put very much thought into it until I tried to grow it. We’re ending our second year of summer gardening, and I really thought our zucchini would thrive. We’re pretty new to gardening around here, and while we’ve had a little too much success with melons and tomatoes, zucchini apparently needed more attention than we thought.
Not a single hint of this fruit popped up in our garden. Mike’s parents, however, were blessed with an abundance of yellow and green squash and showed up with a grocery bag bursting at the seems. They were massive! I’m a little bummed that I can’t find the photo I took with it, but trust me when I say they looked like they came straight out of the Jurassic Era.
So, what do you do with an abundance of zucchini bread? You use it in everything you can, until you’re sick of it. Then you hide it in bread. I mean, I’d like to think that’s the backstory to the origin of zucchini bread.
I couldn’t verify a confirmed origin for zucchini bread, but I did discover that it first appeared in the U.S. I also come across someone explaining that zucchini had a main character moment in the 60’s where all of the major publications shared recipes for this versatile fruit. I’m curious about the zucchini jam, but I don’t think I’ll be attempting it anytime soon.
On that note, I’ll add that I’ve never come across a zucchini bread I didn’t like, but this will always be my go-to recipe. It never fails. This zucchini bread is packed with rich warm flavors, and is beyond delicious served hot with a fresh pat of butter, or in a bowl with a bit of milk and honey. Even if you prefer not to dress it up, it’s fantastic as-is. The mini-loaves also make the perfect grab and go snacks, or sweet little gifts for friends, family and neighbors.

Easy Sweet and Moist Zucchini Bread
Ingredients
- 3 cups flour
- ¼ teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon salt
- 1 cups granulated sugar
- 1 cup brown sugar
- 2 cups grated zucchini
- 3 large eggs
- 1 teaspoon vanilla bean paste, or extract
- ½ cup sour cream
- 1 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat oven to 350 degrees.
- Combine all dry ingredients in a bowl and mix well.
- Beat eggs and mix in the remaining wet ingredients.
- Gradually fold the wet mixture into the dry mixture.

- Pour batter into pans and bake on the middle oven rack for 1 hour and 15 minutes or until a toothpick comes out clean.
