Combine all dry ingredients in a bowl and mix well.
Beat eggs and mix in the remaining wet ingredients.
Gradually fold the wet mixture into the dry mixture.
Grease 2 loaf pans *see notes
Pour batter into pans and bake on the middle oven rack for 1 hour and 15 minutes or until a toothpick comes out clean.
Notes
I make this bread with 1 loaf pan and 1 mini loaf pan. The regular loaf takes just over an hour and the mini loaf takes just under 1 hour depending on the size. It's a good idea to check on it starting at 50 minutes for smaller loaves. I prefer a darker crust, so I usually leave it for the full hour.
