Easy Hidden Veggie-Loaded Pasta Sauce

Ingredients

celery

green bell pepper

garlic

petite diced tomatoes with juice

ounces
tomato paste

water

Italian Seasoning

tbsp
olive oil
Instructions
Finely dice all of your vegetables. Aim for a uniform size.
Saute all vegetables except the garlic 5-10 minutes until tender.
Add the garlic. Saute a few seconds longer.
Stir in tomato paste and seasonings. Add diced tomatoes and water. Bring to a boil.
Reduce heat to low, cover and simmer 1-2 hours or more.
